In order to produce truffles we must care for the trees all year, similar to other annual food crops. 

During the truffle season, we take our dogs into the orchard (truffiere) and ask them to “go find”. 
We train the dogs to mark the ground (by scratching with their paw) where they smell the ripe truffle. 

As soon as they do this, we check that the truffle is definitely ready, before praising them and rewarding them with a treat. 
We then dig it up, wash it, remove any imperfections or damage, and grade accordingly. 

Most of our truffles are sold to a wholesaler in Manjimup to be distributed all around the world, including 

France, USA, Japan, Hong Kong & Singapore. 

We keep some top quality truffle aside to make our truffle salt.
